Ingredients

Cardamom dough ala Meyers

  1. Egg (1 pc.)
  2. Yeast (55g.)
  3. Skimmed milk (5dl)
  4. Cold butter (150g)
  5. Tipo 00 wheat flour (1 kg)
  6. Sugar (150g)
  7. Salt (10g)
  8. Cardamom (25g)

Matcha filled

  1. Matcha powder (4 tbsp.) If matcha is still new to you, or if you're not as crazy about it as we are, put 2 tbsp. instead. You can also flavor the remonce with it.
  2. Vanilla sugar (1 tsp)
  3. Sugar (250g)
  4. Butter (200g)

How to make the dough for your spinners

  • Find a large bowl and stir the yeast into the milk.
  • When the yeast has dissolved, add eggs, sugar, salt, cardamom and tipo 00.
  • Knead the dough for 8 minutes at low speed (on machine)
  • In the meantime, cut the butter into small pieces and when the dough has been kneaded for 8 minutes, add the pieces of butter slowly to make the dough smooth. Stir for another 8 minutes.
  • Put a tea towel over the dough and let it rise in a warm place for 1.5 hours.
  • When the rising time is over, uncover the dough and refrigerate for an hour.

Make the filling with matcha

  • When the dough has been in the fridge for an hour, you can start with the filling. The djen should stay in the fridge a little longer while you make the filling.
  • Take all ingredients for the filling and beat together with an electric whisk.

How to fold your spinners

  • After you have made the filling, take the dough out of the fridge and roll it out on a floured board.
  • Use a rolling pin to carefully roll out the dough into a rectangle, then spread the filling evenly over the dough.
  • The sides are then folded in towards the middle, where you first take the upper part and fold down, after which the lower part is folded over. This gives you three layers.
  • The dough is then rolled out to approximately 30x30 cm and cut into approximately 1-1.5 cm width.
  • Twist each stem and roll it around itself by holding onto one end and then rolling the rest around.

  • Put half of your spinners on a baking tray and let them rise until double in size.
  • You now only need to bake your spinners. Brush with egg and bake at 200 degrees for 10-12 minutes.
