Japanese pastries combine the best of Asian, European and American baking. The experienced Japanese pastry chef Ai Ventura, who lives in Sweden, presents the reader with a new way of thinking about such basic elements as whipping cream or making a pie base. The approximately 40 recipes are divided into three groups: Wagashi is the traditional Japanese pastry, yogashi is pastry inspired by the West, and kashipan are delicate Japanese wheat breads. In addition, we get to know Japanese baking ingredients such as bean paste of various kinds, rice flour, pumpkin and sweet potatoes, and we get an insight into the sophisticated Japanese tea ceremony.


About the author
Ai Ventura (b. 1984) is a trained pastry chef in Japan and has, among other things, run his own pastry shop in Tokyo. Since 2013, she lives with her husband and two daughters in Sweden, where she is very successful with her pop-up café Bon Aibon.
