Noma’s journey with Kyoto began in 2009 when René Redzepi was invited to the city by renowned Japanese chef Murata-san. During an intense two-week stay, led by the three-Michelin-starred chef, René was immersed in the rich traditions of Japanese food culture – and a true love story with Japan began.

During the first corona lockdown in April 2020, René came across pictures of the newly built Ace Hotel in Kyoto while reading about Japanese architect Kengo Kuma. Inspired – and looking for a new beginning after the extremely challenging corona times – he shared the pictures with his colleagues, and the idea of ​​a pop-up in Kyoto, once the pandemic was over, was born:

“What we didn’t know then was that it would take over three years to realize this dream.

But the long wait gave us ample opportunity to prepare thoroughly. Over the course of three years, we explored every corner of Kyoto – and Japan in general – from mountains and temples to wineries, miso factories, noodle restaurants, Michelin-starred restaurants and much more.

In 2023, our team of over a hundred people arrived in Kyoto, all driven by their own hunger for discovery. Individually and collectively, we embarked on day trips, weekend getaways, and targeted explorations of Kyoto’s vibrant restaurant, art, ramen, and coffee scenes—and found countless, truly special places, all worth experiencing.”
